“It is a great honour<\/strong> for me to preside over the jury of the Euskal Herria Pintxos Championship here in Hondarribia<\/strong>, whose tradition and fame for pintxos are known worldwide”, said Elena Arzak<\/strong> after it was confirmed that she will be chairing the Jury of the 2023 Euskal Herria Pintxos Championship.<\/p>\r\n “Going out for pintxos<\/strong> in the bars of our towns is part of our gastronomic culture<\/strong>, eating and enjoying the small culinary wonders that are cooked even in the most remote places of our geography”, he stresses.<\/p>\r\n “Many of them tell the story of a family<\/strong> or a bar<\/strong> through those recipes that have been passed down from generation to generation and have become part of the heritage of our gastronomy. Like the gilda<\/strong>, which was created in Vall\u00e9s Bar<\/strong> and has crossed borders, becoming an icon of our miniature cuisine, marking a before and after in our gastronomy”.<\/p>\r\n Elena Arzak remembers “those gastronomic walks<\/strong> when my father, Juan Mari Arzak, would take us from bar to bar so that we could learn about the history of the delicacies that filled the bars. A custom that I have passed on to my children and that I teach to friends and acquaintances who come to visit our city, because what would our city be without its pintxos?<\/strong>“.<\/p>\r\n He also notes that over the years the pintxo has also been modernised, updated<\/strong> and “has taken giant steps to become a contemporary Basque cuisine<\/strong>, whose merit is to praise and highlight the imagination, effort and quality with which all the chefs work to create a great dish in a small format”.<\/p>\r\n “We also wanted to capture this hallmark of our identity, our culinary culture<\/strong>, through these small bites that are the beginning of the gastronomic experience of our house, of the Arzak.
