From then on, Juli\u00e1n began to investigate and carry out tests until he found the <strong>inclined grill with rods<\/strong> that we can find today in the best steakhouses.<\/p>\r\n<p><img decoding=\"async\" title=\"AR5_0291\" src=\"https:\/\/basquemagazine.com\/wp-content\/uploads\/2021\/05\/AR5_0291.png\" alt=\"AR5_0291\" width=\"970\" height=\"552\" \/><\/p>\r\n<p>&nbsp;<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>Such was his success that he ended up setting up the Casa Juli\u00e1n steakhouse in <strong>1954<\/strong> and a few years later he replaced the veal chop with beef, becoming <strong>the first steakhouse of its kind<\/strong>.<\/p>\r\n<p>Before retiring, he wanted to convince <strong>Mat\u00edas Gorrochategui<\/strong>, a friend of his, to follow in his footsteps. Mat\u00edas accepted the proposal and since then he has been running Casa Juli\u00e1n for more than thirty years, grilling steaks in one of the true gastronomic temples of Basque cuisine.
