Rioja Alavesa has a rich culinary tradition. From the most modern restaurants to those that stick to the most classic dishes, they all have in common their great respect for tradition. Autumn reconciles us with comfort food and this land offers us the best products to prepare delicious recipes. Spoon dishes are once again the most appetising and the most popular at lunchtime. Rioja Alavesa cannot be understood without its gastronomy and, at this time of year, the landscapes and colours of the vineyards create the perfect atmosphere for enjoying a good autumn meal.
To warm up this season, how about preparing some beans with km0 products from Rioja Alavesa? What's more, you can always pair your dish with local wines and bring out unique sensations and flavours. Here's how to make them with an exquisite recipe.
300 g of beans
50 g chorizo
50 g bacon
75 g fried tomato sauce
Half an onion
1 clove of garlic
1 roasted red pepper
40 g olive oil
2 L of water
The first step in this recipe is to fill a saucepan with water. When it starts to boil, add a spoonful of salt and put the beans in the pot and leave them to cook for 45 minutes.
While the beans are cooking, prepare a stir-fry with the meat and vegetables. Put a frying pan on the heat and add a generous splash of olive oil. When it is hot, add the chorizo and sliced bacon.
Once the chorizo and bacon have rendered all the fat, add the onion, chopped garlic and a pinch of salt. When the onions are ready, add the tomato sauce and the chopped peppers. Leave everything to simmer until the beans are ready.
After cooking the beans, we can remove a little of the water so that the stew does not overcook. Then mix the stir-fry with the beans and stir to mix everything well. Leave the beans to cook with the stir-fry for 15 minutes and then check the salt content.
Our stew is ready! Now it's time to plate and enjoy this spectacular dish.
The best way to experience the cuisine of Rioja Alavesa is to combine it with a tour of the vineyards or a stroll through its villages. Go to Rioja Alavesa and enjoy the gastronomy this autumn.
