Beans from Álava, savour the spoon dishes this autumn

The cold weather is coming and we feel like eating spoon dishes. We bring back one of the most traditional recipes from the south of Álava, beans. A recipe to enjoy the flavours of autumn.

Ingredients
300 g of beans
50 g chorizo
50 g bacon
75 g fried tomato sauce
Half an onion
1 clove of garlic
1 roasted red pepper
40 g olive oil
2 L of water
Salt
Elaboration
The first step in this recipe is to fill a saucepan with water. When it starts to boil, add a spoonful of salt and put the beans in the pot and leave them to cook for 45 minutes.
While the beans are cooking, prepare a stir-fry with the meat and vegetables. Put a frying pan on the heat and add a generous splash of olive oil. When it is hot, add the chorizo and sliced bacon.
Once the chorizo and bacon have rendered all the fat, add the onion, chopped garlic and a pinch of salt. When the onions are ready, add the tomato sauce and the chopped peppers. Leave everything to simmer until the beans are ready.
After cooking the beans, we can remove a little of the water so that the stew does not overcook. Then mix the stir-fry with the beans and stir to mix everything well. Leave the beans to cook with the stir-fry for 15 minutes and then check the salt content.
