"It is a great honour for me to preside over the jury of the Euskal Herria Pintxos Championship here in Hondarribia, whose tradition and fame for pintxos are known worldwide", said Elena Arzak after it was confirmed that she will be chairing the Jury of the 2023 Euskal Herria Pintxos Championship.

"Going out for pintxos in the bars of our towns is part of our gastronomic culture, eating and enjoying the small culinary wonders that are cooked even in the most remote places of our geography", he stresses.

"Many of them tell the story of a family or a bar through those recipes that have been passed down from generation to generation and have become part of the heritage of our gastronomy. Like the gilda, which was created in Vallés Bar and has crossed borders, becoming an icon of our miniature cuisine, marking a before and after in our gastronomy".

Elena Arzak remembers "those gastronomic walks when my father, Juan Mari Arzak, would take us from bar to bar so that we could learn about the history of the delicacies that filled the bars. A custom that I have passed on to my children and that I teach to friends and acquaintances who come to visit our city, because what would our city be without its pintxos?".

He also notes that over the years the pintxo has also been modernised, updated and "has taken giant steps to become a contemporary Basque cuisine, whose merit is to praise and highlight the imagination, effort and quality with which all the chefs work to create a great dish in a small format".

"We also wanted to capture this hallmark of our identity, our culinary culture, through these small bites that are the beginning of the gastronomic experience of our house, of the Arzak. For all these reasons, it is a great honour for me to preside over the jury of the Euskal Herria Pintxos Championship here in Hondarribia, whose tradition and fame for pintxos are known worldwide", she stresses.

Elena Arzak also adds her name to other great culinary professionals who acted and chaired the jury of this Championship such as: Martín Berasategui, Fina Puigdevall, Albert Sastregener, Raül Balam, Víctor Martín, Juanjo Pérez, Paco Queirós, Iñaki López de Viñaspre, Miquel Ruiz, Kisko García, José Antonio Campoviejo, Carolina Sánchez, David Yárnoz, Ramón Roteta, Sergi Arola... among many others.
