Among the Basque specialities to be enjoyed in Bayonne, one is the star of the show: the famous Bayonnne ham, which has been appreciated since the Middle Ages. Every year at Easter, from Thursday morning to Sunday afternoon, the Ham Fair is held.

Some thirty artisan butchers from the region offer hams bearing the Bayonne Ham label for tasting or purchase. This fair has been held since 1426 and allows visitors to discover the traditional manufacturing methods and to taste the many hams from Bayonne, all of which are handmade.

It starts on Thursday morning from 8 am with the competition for the best home-made ham. The jury will select the top three hams from among the hundred or so submitted. They will be auctioned off at the end of the competition. The Fair now closes on Sunday with the Chapter of the Bayonne Ham Guild and the enthronement of new members. Lively meals will be organised under marquees.

Four intense days to experience in the historic heart of the town to the rhythm of traditional musical entertainment and various sporting and culinary competitions.
