San Sebastian presents the “Pintxo Institute” at FITUR

Donostia/San Sebastian will be present at FITUR from 19 to 23 January, with a stand in the Basque Country space offering information on its main areas of tourism: gastronomy, culture, sports, premium and congresses. It will also present the Guide of the Donostia-San Sebastian Pintxo Institute. An instrument to protect, promote and disseminate one of the best-known traditions of our gastronomic culture: the pintxo.

The Instituto del Pintxo is an independent, non-profit association that was created in 2019 with the aim of giving a boost to local, unique and quality gastronomy in our city. It is made up of an executive committee and different neighbourhood delegates and advisors who have drawn up The Pintxo Decalogue that defends and protects essential values, such as the tradition of the product, sustainability, quality and the image of Donostia/San Sebastián.

"During the year 2020 and part of 2021, the pandemic has forced us to stop this work, as well as that of a large part of the hotel and catering industry", said Jesús Santamaria, president of the Pintxo Institute. "But we want to move forward and that is why we are presenting a strategic plan that will allow us to get going again, adapt to the current circumstances, and once again position the pintxo and the establishments in Donostia in the place they deserve, designing what the future of Pintxos in Donostia could be".

The Pintxo Institute Guide

The guide is one of the main tools of the Institute. It will reflect the establishments that comply with the above-mentioned decalogue and will be evaluated by a committee of experts made up of a group of 20 evaluators, all of them related to the world of gastronomy, but in no case active hoteliers. Each establishment will be visited by several of these people in order to obtain a final rating.

Jesús Santamaría also wanted to stress that "signing up is easy and this is how you can become part of the project. If you consider that you comply with the decalogue, all you have to do is fill in the form so that our evaluators can visit you".

The guide will serve to promote and highlight the good work, professionalism and respect for tradition of these establishments that work with the Donostia pintxo.

Gastronomic tourism

Gastronomic tourism is one of the strategic lines of work for the tourist positioning of Donostia / San Sebastián, so it is a priority to promote the development and support of local gastronomy, as well as city break, cultural, shopping, sports, congress and premium tourism, all based on transversal values such as sustainability, quality and authenticity of the destination.
